I am becoming more Mexican Every Year

We have a wonderful supermarket here now named Rancho Liboria. A couple of years back I learned to make menudo and I make a mean pot of menudo. Even my mexican friends prefer it to thier mamis. LoL. I then learned how to make caldos of different kinds. I learned to make Enchiladas a la Potosina scrumptious I may add. Well what else can I conquer is the next question! Tamales of course. So can you guess what I am making for a Tuesday night dinner. Tamales of pork in red chile. I am so excited. I started them at 12 and they should be ready by 230! I grabbed a chancla and hit the pot 3 times to show those tamales who are boss. Cause you know sometimes they get mad and refuse to cook. I swear look it up. LoL. Big Ro is so proud of me. He tried my pork during lunch and told me it was really good and wishes we could eat them now. Sorry baby but I have been working on all this since 330 this morning. I now understand why they cost so much. I am excited to make these. I hope they turn out as good as they smell.

Edited to Add: It is now 3:44 and I finished my first batch. They look great. I am dying to dig into them but hubby does not leave until 4. I took pictures of them for you guys. Plus who knows when I will try again. LoL

I am so happy they turned out and even happier that they were a big hit. I will take orders here after my mil goes back to CA
